Crusted Honey Mustard Chicken - EDITORS CHOICE
Cooking spray
2/3 cup Lite honey mustard dressing (I like Paul Newman's brand)
1/8 TSP salt
1/8 TSP pepper
2 TSP dill, freshly chopped (I used dried and it worked just as well)
1 cup cornflake crumbs (keep some extra on hand just in case)
1 pound uncooked boneless chicken breasts, 4oz each (if the are thick be sure to pound thinner)
Preheat oven to 425. Coat a shallow pan with cooking spray.
In a small bowl, combine honey mustard dressing, salt, pepper, and dill. Remove 1/3 cup and set aside.
Place cornflake crumbs in a shallow bowl. Dip chicken into the 2/3 of the remaining dressing mixture and the cornflake crumbs; place in pan.
Bake until chicken is golden and no longer pink in center, about 15 minutes.
Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over e chicken breasts and serve.
