Oven Roasted Potatoes

2 large potatoes, scrubbed

3 TBSP olive oil

1 TBSP Italian seasoning

1TSP salt

4 TBSP Parmesan cheese

 

Slice potatoes into very thin slices (no bigger than 1/4 inch).

 

Toss potatoes with olive oil, Italian seasoning and salt in a Ziploc bag to coat. Place in a single layer on a baking sheet lined with foil.

 

Bake at 450 degrees for 15-20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
